2008 Chablis, Domaine d’Elise

Facing a plate of oysters? This wine, with its enticing smoky aromas and unusual depth of minerally, citrusy flavour, is the Chablis to choose. Frédéric Prain took over Domaine d’Elise, on slopes in the village of Milly, above the Premier Cru ‘Côte de Lechet’, in 1983, transforming 13 hectares of stony vineyards with the help of just four workers. Vinification is thorough yet gentle, with the wine allowed to rest on its fine lees for a very long while.

If you’ve preconceived notions about Beaujolais being weak-willed and girly, then here’s the wine to change your mind. We’ve always admired the robust, fleshy, forceful and full-bodied styles made in Brouilly, southernmost ‘cru’ (one of ten quality enclaves on granite hills to the north of the region). This is the Gamay grape at full throttle, with notable earthy substance balanced by ample, vibrant, juicy fruit. At its best with roasts, grills and charcuterie.

 

TEICHENNE – Coconut 70cl Bottle

The original, entirely natural flavoured schnapps, Teichenne comes from a family-owned distillery in the Catalan region of Spain. Natural ingredients and real fruit essences combine to produce a dizzying rainbow of flavours: Peach, Apple, Butterscotch, Chocolate, Vanilla, Melon, Lemon, Strawberry, Raspberry, Banana, Green Apple, Kiwi, Blackcurrant, Coffee and Coconut. The Teichenne story begins in 1956, when Juan Teichenne Senaux began handmaking liqueurs in the small town of LArbo. By the late 1980s Teichenne was the Spanish market leader; today it is an international brand. Teichenne peach schnapps is the discerning bartender’s peach liqueur of choice. Like all schnapps in the Teichenne range, it can be enjoyed as a chilled shot, over ice or in a host of exciting cocktails.

 

IONA – The Gunnar 2005 75cl Bottle

Displays all the hallmarks of fine wine making in a New World cool climate. The nose is of ripe plums with some balancing hints of leaves and mint, the palate is medium to full bodied with an elegant, well structured texture anchoring its plummy, damson and slightly spicy character. This wine is polished and stylish with an open generosity that makes it very accessible. Pan fried lamb cutlets with spinach and stilton mash, roasted mediterranean vegetables with Planeta’s olive oil, roasted leg of lamb with rosemary and garlic or simply a selection of cheese. Situated just 3km from the sea there is a cooling breeze which inflences the vineyard, helping to produce a cooler, longer ripening period. Diurnal temperatures are varied which helps with the aromatic quality of the wine. Grapes are hand harvested and crushed into steel to complete fermentation to dryness. Ageing is for 12 months in 25% new barrels which are mostly French.

HENRIQUES AND HENRIQUES – Medium Dry 3 Year Old 75cl Bottle

A golden, medium dry wine. A good all purpose ‘verdelho-style’ of wine. Madeira should be cellared upright. This is ideal as an aperitif or as an accompaniment to consommes, pates or cakes. It is also well matched with smoked fish. Madeira starts life as fermenting must and is then fortified, either to arrest fermentation for a Malmsey or a Bual, or after fermenting out, in the case of Sercial or a Verdelho (to a minimum of 17% alcohol) and undergoes its own very special maturation process. Fermentation takes place at different stages according to the grape variety used. Grapes are picked from mid-August up to the end of October and the special ‘estufagem’ of the wines begins in January. The Estufa process: The unique character of Madeira was discovered in the 15th Century, when Madeira wines were used as victuals for ship’s companies, stored in the holds of caravels. The blowsy heat of the ship’s hold was found to have dramatically improved the wines, making them richer and more complex, as well as proving them to be the most stable in heat. This also demonstrated the great ageing potential that they had. The wines are estufa’d usually for 3 months in termperatures rising to 45 degrees C before being allowed to cool. Maturation then starts in wooden casks, which need not be topped up. The wines are not bottled until they are at least 3 years old. Invented in 1938 by Peter Cossart, father of John Cossart, Monte Seco was the first wine he made on his own at the age of 19. It was his answer in terms of Madeira to Fino and Manzanilla.
